Dexter's both fit, trained and experienced with fighting. He knows exactly where to target people (as shown when beating up the abusive father a few episodes ago)
He's also quick to take lethal measures, most people would not be so willing to murder someone in a fight. Both of those are advantage enough for him to win most fights
