I think it was their way of providing a kind of series finale if it doesn't come back for some reason.
When Zheng is suggesting the two pairing up for revenge, he seems interested but then she added Stede doing some pirating and he gave her a hard look.
I think the ending means that he knows what he’s good at (pirating, not fishing) and he can always go back to pirate life, but right now he wants a quiet retired life, with Stede, as an inkeeper.

Bit of a weird ending. There's a clear cliffhanger telling us that there will be a season 3 to resolve the revenge plot, but at the same time Blackbeard settles down with Stede? What was that "you gotta do what you're good at" build up if he ends up owning an inn?
