On a pristine mountain stream in Victoria’s High Country, chef Anthony Simone (Baby Café & Pizzeria) takes us to his favourite trout fishing spot from childhood and shares his simple recipe for smoking trout using a wok, hickory chips and eucalyptus leaves.
