Fate is damn confusing, so I'm trying to un-confuse it. Hopefully this is digestible. There are two big buckets to keep track of: Fate/Stay Night and Fate/Grand Order.
• Fate/Stay Night comes first, and to confuse you more it has three "routes". Just follow the list and you'll see how that works.
• Fate/Grand Order has "2 big story arcs", but only one arc exists at the time of writing. 1-5 of it's 8 chapters won't be adapted. I'll keep putting you down the release order path.
This list is locked to release order, but I'll push you off that once to finish up a movie trilogy.

Fate/Stay Night storyline: Start Here.
• 1. Fate/Stay Night (2006) - It takes a bit to get into, but it's worth watching to get to #3 and beyond. Don't worry about the specials.
• 2. Fate/Stay Night: Unlimited Blade Works (2010) - Move on to #3 instead. You're allowed to skip this one and replace with #4-6 since those cover the same content as this movie.
• 3. Fate/Zero (2011) - A prequel to #1, and enjoyed better after seeing that first. Watch it all and then move on. Don't worry about the specials.
• 4. Prologue - Fate/Stay Night: Unlimited Blade Works (2014) - Make sure to watch the Prologue before the show itself.
• 5. Fate/Stay Night: Unlimited Blade Works (2014) - The second "route" of Fate/Stay Night's story, same as #2, which is why that was ok to skip. Watch it all and then move on.
• 6. Sunny Day - Fate/Stay Night: Unlimited Blade Works (2014) - An alternate ending special.
• 9. Fate/Stay Night: Heaven's Feel I. Presage Flower 2017 - A movie trilogy for the third "route" of Fate/Stay Night's story. You've seen two by now.
• 12. Fate/Stay Night: Heaven's Feel II. Lost Butterfly (2019) - I've pushed you off the list order now, but we're going to finish up this trilogy and then clean things up.
• 15. Fate/Stay Night: Heaven's Feel III. Spring Song (2020) - This wraps up the Fate/Stay Night storyline. Now let's clean up what we missed and take a look at Fate/Grand Order.

Clean-up before Fate/Grand Order:
• 8. Fate/Apogrypha (2017) - You're allowed to skip this one.* Haven't seen it yet, but that appears to be the community consensus. Don't worry about the specials.
• 11. Fate/Extra Last Encore (2018) - I'm not entirely sure what to say about this one. No clue if it's good or not or what it covers. May need to worry about the specials.

Fate/Grand Order storyline:
• 7. Fate/Grand Order: First Order (2016) - Introduction to the Fate/Grand Order world.
• 10. Moonlight/Lostroom - Fate/Grand Order - Absolute Demonic Front: Babylonia (2019)
• 13. Initium Iter - Fate/Grand Order - Absolute Demonic Front: Babylonia (2019) - Introduction to the Babylonia anime.
• 14. Fate/Grand Order - Absolute Demonic Front: Babylonia (2019) - As you finally start the 7th chapter I'll take this opportunity to say how utterly stupid this name sounds out loud.
• 16. Fate/Grand Order: The Sacred Round Table Realm: Camelot 1 - Wandering; Agateram (2020) - Camelot 1 and 2 cover the 6th chapter of this arc.
• 17. Fate/Grand Order: The Sacred Round Table Realm: Camelot 2 - Paladin; Agateram (2021) - The second movie for the 6th chapter of this arc.
• 18. Fate/Grand Order Final Singularity – Grand Temple of Time: Solomon (2021) - The 8th chapter for the first arc. Congrats, you've conquered what we know of Fate/Grand Order.

Listing Spin-offs so hopefully everything is covered:
• 19. Fate/Prototype (2011) - Released between #3 and #4. I'm not really sure what this is. Most don't put it in the main watch order.
• 20. Today's Menu for the Emiya Family (2017) - Released between #9 and #10. Seems like it could be fun.
